Emily's Black Bean Salsa

Candice's last post was about a family reunion we had this past Saturday. We had such a good time visiting with family and, of course, eating. My kids always have so much fun with their cousins...they never want to come home!

Anyway, it was a potluck dinner and I decided to bring black bean salsa. I got this recipe from my sweet sister-in-law, Emily. She made it for a family BBQ quite a while ago and I just had to ask for the recipe. It's a super easy salsa to make! It is so fresh and yummy, and even tastes better if made an hour or two before you plan on eating it.


Emily's Black Bean Salsa

1 15 oz can black beans, drained and rinsed
1 11 oz can white shoepeg corn, drained
2 10 oz cans Rotel, drained
1/2 lime, juiced
1/2 lemon, juiced
1/2 bunch cilantro, chopped
3-6 green onions, chopped
1-2 dashes lemon pepper

Yes, this is all you need to make this salsa. Incredibly easy!

Combine all ingredients in a bowl and stir well. That's it!
